We like to roast a pig every now and then. We like to use La Caja China roasting box. Easy to use and can take up to a 150 lb dressed pig. These a pictures from super bowl parties. Nothing was left, including the ears and the tail (the best parts).
Initially leave the pig with back side down and inject the larger areas/ muscles with your choice of marinade. Generously sprinkle adobo to cover entire pig. This is a must for any pork dish.
After 3-4 hours of roasting (depending on the ambient weather), you will flip the hog in order to char the backside or skin to make it crispy. Roasting is finished when you see the skin forming large crispy bubbles. Remove from box strip the meat with your hands or tongs. Careful, it will be hot!
